I have no clue what is a good spec for one, could anyone fill me in with some links to some phat ass DPS specs, like with ghouls and shit.

Try them all...all 3 specs are viable tank and dps specs. 

The main differences.

Blood - little more single target dps, less aoe dps, 2 minute pet, more heals.
Unholy- More survivability, more aoe dps, less single target, perma pet.
Frost - Lots of tank/aggro abilities, spikier single target dps, probably most gear reliant spec.

With this in mind, all three specs are awesome at grinding and hold their own in tanking or dpsing.
The old 'one talent tree for one job' mentality is gone with DKs.

You will rarely if ever die, the self healing is great, free health pot, perma ghoul, most of the worth while AoE talents in Unholy, 3 minute gargoyle which is as strong as the 51 point blood talent, you can kill non stop with full health.

As Gristle said,

Blood: Highest Single Target DPS, Great survivability through self healing
Frost: Highest Burst Damage, Slightly Gear dependant, Great survivability talents
Unholy: Highest AoE DPS, Good survivabillity through tanking talents

As far as tanking goes, all three trees are decent, however blood lacks a bit on tanking. Frost seems to be the most popular, with an unholy subspec. As mentioned before, all three trees are decent, so pick whichever fits your playstyle more. I've played them all in Beta and they all have strong points. I've found the one I linked above to be superior for leveling due to Good Single Target DPS, Good AoE DPS, and Great Survivability.

Randoru, if you go with that spec do you *have* to pull multiple mobs to be really efficient, or can you just quest grind on single mobs? 

I know so far from what I have seen all three specs are pretty amazing and flexible, just wondering about Unholy.

With the spec I posted you rock out more single target DPS, but your AoE dps isn't anything to sneeze at.

Butchery: the reason every DK should have 2 points in blood. combined with my other talents I am a runic power font, chucking coils left and right.

I skipped most tanking talents in favor of damage and leveling friendly abilities. I found my grinding/killing ability is amazing, I have zero downtime and can take on elite/group quests solo with no problems.

I love my spec...

I played for an hour or so as Unholy last night, just my impressions.

I like Blood a whole lot better for grinding/leveling.  Unholy is much more rune intensive than Blood, and is less dps for single targets.  Not by much mind you, but whereas I always finish fights with multiple mobs full health with Blood I found myself down a couple k in hps here and there.   

Found myself not able to do anything but death coil quite a few times in my rotation...two diseases, scourge strike...nothing left to do for a bit with runes except wait.

The pet is strong.  I like some of the Unholy talents.  Fighting elites or group quest mobs is much easier as Blood by far.

Having to recast Bone armor every fight is a huge pain in the fucking ass.  Nice ability, shitty design. 

I missed being able to pump out dps every second, never have to wait on runes with Bloods rotations.  I missed the 4 or 5 forms of healing that Blood offers.  I miss the huge heart strikes.  I missed the 100% crit death coils.  I miss the extra 4-5% spell and melee crit that Blood offers, and the 150-250 attack power bonus it gives over Unholy.

Overall, both specs are fun.  I didn't feel 'gimped' as Unholy, I just don't like the playstyle near as much as I do Blood.  Especially for leveling and grinding.
